- Lemon juice: 1 whole lemon
- Plain yogurt: 1/2 cup
- Fresh pita bread or flatbreads: for serving
- Fresh vegetables (lettuce, tomatoes, cucumbers),thinly sliced: as per your choice
- Tahini sauce: for drizzling
Instructions:
Marination:
- In a bowl, combine the sliced meat, sliced onion, minced garlic, olive oil, ground cumin, paprika, ground coriander, ground turmeric, salt, black pepper, lemon juice, and plain yogurt.
- Mix the ingredients thoroughly, ensuring the meat is well-coated with the marinade.
- Cover the bowl and refrigerate for at least 2 hours, allowing the flavors to meld together.

Cooking Instructions:
Preheat the Grill:
- If you have a vertical rotisserie, preheat it. If not, you can use a grill pan on the stovetop.
- Thread the marinated meat and onions onto the skewer of the rotisserie or onto metal skewers if you are using a grill pan. Pack the meat tightly for even cooking.
Cooking Process:
- If using a rotisserie, cook the meat for about 20-25 minutes, rotating occasionally until it's cooked through and has a beautiful golden-brown color.
- If using a grill pan, cook the skewers over medium-high heat, turning occasionally, until the meat is cooked and slightly charred.
- Once cooked, let the meat rest for a few minutes. Then, using a sharp knife, thinly slice the meat from the skewer.
Assembling the Shawarma:
- Warm the pita bread or flatbreads in a dry pan for a minute on each side until they are pliable.
- Place a generous amount of sliced meat on the warm bread.
- Top with fresh lettuce, tomatoes, and cucumbers.
- Drizzle with tahini sauce for a creamy, nutty flavor.
- Add a few pickles on the side for a burst of tanginess.
Your homemade Turkish Shawarma is ready to be savored! Roll up the bread around the flavorful filling, creating a wrap, and indulge in the delightful taste of authentic Turkish Shawarma.
