Ingredients:

  • Chicken - 1 1/2 kg
  • Curd - 2 Tablespoon
  • Lemon juice - 1 Teaspoon
  • Salt - As per your taste
  • Ginger garlic paste - 1 teaspoon
  • Dry red chilies - 4 nos
  • Black pepper - 10 nos
  • Coriander powder - 1 Tablespoon
  • Cumin seeds - 1 Teaspoon
  • Fennel seeds - 1 Teaspoon
  • Tomato - 1 nos
  • Shallots - 8 nos
  • Coriander leaves: - 1 cup
  • Onion-  1 no
  • Green chilies - 2 nos
  • Oil - For frying  

Instructions:


1. Base marination

  • Cut chicken into big pieces, then make holes with a fork for easy marination.
  • Add curd, lemon juice, black pepper powder, ginger garlic paste, and salt to the chicken, mix well, and marinate for 15 minutes.

2. Making masala powder

  • Heat a pan on low flame. Add dry red chilies, black pepper, cumin seeds, and fennel seeds.
  • Roast for 1 minute, and stir continuously otherwise it will burn.
  • Add coriander powder and roast for another 10 seconds.
  • Take a jar mixer grinder. Add these ingredients and crush well.
  • Masala powder is ready.

3. Making Tomato masala

  • Cut onion and tomato into small pieces.
  • Take a jar of mixer grinder.
  • Add onion, shallots, green chilies, tomato, and coriander leaves. Blend well.
  • The tomato masala is ready.

4. Marination

  • Take base marinated chicken.
  • Add 1 and 1/2 tablespoon masala powder, 1 tablespoon onion masala, and salt. Mix well.
  • Marinate for 5 hours in the refrigerator.

5. Frying

  • Heat a pan on medium flame.
  • Add oil. when the oil gets enough hot add each chicken piece.
  • Cook each side very well.

6. Smoking

  • Insert a small bowl with hot charcoal in the frying pan.
  • Pour 1 tablespoon of oil into the small bowl, when it starts to smoke close it well with a lid.
  • After 15 minutes open the lid.
  • Chicken al faham is ready.
  • Serve with rice, chappati, kubboos, etc.
