Introduction:
Elanji (sweet love letter) is a delectable and traditional sweet dish from the southern Indian state of Kerala. It is a popular delicacy often prepared during festive occasions, celebrations, and weddings. Elanji is known for its irresistible combination of flavors, textures, and aromatic spices.
This delightful treat is made by stuffing a flavorful filling into folded, crispy, and golden-brown rice flour crepes. The filling typically consists of a mixture of grated coconut, jaggery (unrefined cane sugar), cardamom powder, and sometimes a hint of roasted nuts or raisins. Ingredients:
- Maida / all-purpose flour - 1 cup
- Egg - 1 nos
- Turmeric powder - 1/4 Teaspoon
- Salt - As per taste
- Water - As required
- Ghee - 2 Tablespoon
- Grated Coconut - 1 cup
- Banana - 1/2 cup (sliced)
- Sugar - 3 Tablespoon
- Cardamom - 3 nos
- Cashew nuts and raisins - 10 each
Instructions:
Step 1
- Heat a pan on a low flame.
- Add ghee, cashew nuts, raisins, cardamom, coconut, and banana. stir continuously on low flame for 1 minute.
- Add sugar and mix well, stirring continuously on low flame for 5 minutes.
- Remove from the flame, now the filling or stuffing is ready.
- Make a bowl add maida, egg, turmeric powder, and salt, and mix well.
- Add enough water and make a smooth batter. the batter should be thinner than the dosa batter.
- Heat a non-stick pan and pour a spoon full of batter in the center.
- Spread with the back of the spoon to a thin round. Keep on a medium flame for 1-2 minutes
- When it is cooked on one side, remove it from a plate.
- Place a spoon full of coconut filling on one end of the pancake and roll it.
- Sweet Elanji is ready.
